做法(fǎ ):洗(xǐ )净宰好鲫鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油,待油六成(chéng )热(rè )下鱼,煎至微(wēi )黄。煮沸瓦煲里(lǐ )的清(qīng )水,放入煎煮好的鲫(jì )鱼和其他材料,武火煮沸,转中小(xiǎo )火(huǒ )煲(bāo )一(yī )个半小时(shí ),下(xià )盐调味即可品(pǐn )尝。
